  • Homemade Ice Pop Ideas

    It's finally beginning to warm up with summer around the corner. A tasty way to keep cool is with these easy ice pop ideas.

    1. Sweet Avocado Ice Pop

    Adapted from Food Republic

    1 cup water
    1/2 cup sugar
    2 small ripe avocados
    pinch of salt
    2 tablespoons freshly squeezed lime juice

    Combine the water and sugar in a small saucepan and cook over medium-high heat, stirring, until the mixture comes to a boil and the sugar has dissolved. Let cool to room temperature.

    Cut the avocados in half lengthwise. Remove the pit and scoop the flesh into a blender, along with the cooled syrup and salt. Blend until smooth, scraping the sides as needed. Add the lime juice and blend just until combined

    If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (11/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer’s instructions.

     

    2. Lime Pie Ice Pops

    Adapted from The Kitchn

    1 (14-ounce) can sweetened condensed milk
    1 cup half-and-half
    3/4 cup freshly squeezed lime juice (about 4 large limes)
    2 teaspoons lime zest
    Pinch of salt
    3 cups coarsely crushed Maria cookies, or graham crackers

    Put the sweetened condensed milk, half-and-half, lime juice, lime zest, and salt in a bowl and whisk until thoroughly combined.

    If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1½ to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer’s instructions.

    Spread the graham cracker pieces on a large plate. Unmold the paletas and press each side into the graham crackers, coating completely.

     

    3. Fresh Fruit Ice Pops

     

    Adapted from Lil Sugar

    1 peach, cut into 1/2-inch slices (1/2 cup)
    2 kiwis, peeled and sliced into 1/4-inch rounds
    3/4 cup strawberries, finely chopped
    1/2 cup blueberries
    1/2 cup raspberries
    1 1/2 to 2 cups of fruit punch or 100 percent white-grape juice

    Combine fruit in a mixing bowl and arrange the mixture into eight 3-ounce popsicle molds.

    Pour enough juice into each mold to just cover fruit.

    Insert popsicle sticks and freeze until solid (about six hours).

     

    4. Pineapple Yogurt Ice Pops

    Stir puréed pineapple into vanilla yogurt and freeze in ice-pop molds
