  • White Chocolate Strawberries


    This recipe was honestly just a crazy random happenstance. Friday while I was at work and Tim had a half day, he stopped by to grab the house keys from me. I had the hankerin' for a nice round of fresh strawberries and he offered to pick some up for me. By offered I mean I begged. After a while he returned with these super sweet berries and I enjoyed nearly all of them. I brought home the remaining berries in hopes to make strawberry pancakes on Saturday. Well I forgot about the pancakes and when I remembered about these sweet little guys, I whipped out the white chocolate and this is what happened.

    I used one of my favorite white cake recipes, but I halved it. It probably would have worked better to use the full recipe but they were still pretty delicious. Here's the full recipe.

    Ready your baking Buddy: 350 degrees!

    What you need:

    • 12 Tablespoons (1 1/2 sticks) butter, softened
    • 1 1/2 Cup sugar
    • 2 Teaspoons baking powder
    • 1/4 Teaspoon salt
    • 6 Large Eggy whites
    • 3/4 Cup milk
    • 1 Teaspoon Vanilla
    • 1 Teaspoon Puffed Marshmallow Vodka
    • 1/2 Cup Strawberries chopped
    • 1/2 Teaspoons sugar

    Chop up your berries and stir together with 1-2 teaspoons of sugar, set aside.

    Beat your butter and sugar until lovely and fluffy.

    In a separate bowl stir together your dry ingredients.

    Combine your eggy whites, milk and flavorings.

    Alternate your dry ingredients with the milk mixture. be sure to end with the dry ingredients, it just seems to work better. Then stir in your berries and their juice!

    Line your cupcake pan and bake 25 minutes until beautiful!

    What's on Top?

    • 2 Sticks of butter, softened
    • 4 Tablespoons of milk
    • 6 Ounces Ghirardhelli white chocolate
    • 2-3 Cups powder sugar*
    • 1 Teaspoon vanilla

    In a double boiler melt the white chocolate with the milk until smooth. Let cool.

    Once the milk and chocolate mixture is cooled, beat your butter until fluffy. Add in the white chocolate and beat until incorporated. Add in the powder sugar a half cup at a time and beat well in between. Once it's fluffy and delicious stir in your vanilla and slap it on them cuppies! I reserved a little bit of chocolate to grate on top. It looks like little fresh snowflakes *Squeeee!!!*

    *Again: I oftentimes do not measure my powder sugar additions. I taste it until it's right for me. This is an approximation measurement. I strongly encourage you to taste it often, what might be just right for me might not be sweet enough for you!!
