I love kale. This is no secret.
And why not? It's healthy, versatile, and delicious. So learning about different ways to use it is always a treat. For Christmas dinner, my dad made a salad of kale mixed with butter leaf lettuce and introduced me to one more way to prepare kale:
Massaging it.
He did this with a little bit of oil and salt, tearing the leaves off the stem and then rolling it between his hands for five minutes. The result? A slick, shiny incarnation of kale - without the bitterness that usually accompanies plain ol' kale.

I do not have much experience eating kale, but a friend's grandma sliced some up and served it on top of some sopes instead of the usual lettuce or green cabbage. I'd have to say I didn't hate it, it was actually interesting to eat and pretty tasty.
Kale is super healthy! many people dislike its taste and texture, but cooking it with different ingredients and techniques can make it delicious :) For example you can make kale chips!
