Ginger Spice Latte Mug Cake

Happy December everyone! I’m so excited to bake lots of holiday treats this month. Lately, I’ve been craving ginger spice treats. I’ve already made a ginger spice latte.
That immediately made me wan to try making a ginger spice latte mug cake.
Speaking of lattes, have you tried the new Verismo system from Starbucks? It’s their version of the single cup home coffee system that even makes Starbucks lattes by inserting a milk pod. I recently sampled it at Sur La Table and really enjoyed it.
Anyway, back to the ginger spice latte mug cake. This came out quite good. You can taste the ginger and the molasses. The only thing was that the coffee flavor is a little light.
Ingredients
2 tbsp strong brewed coffee
1/4 tsp ground ginger
1/4 tsp cinnamon
1 tbsp molasses
4 1/2 tsp sugar
1 egg
3 tbsp oil
3 tbsp fat free milk
5 1/2 tbsp flour
1/8 tsp baking powder
Directions1. Combine all ingredients into oversized mug. Stir with a small whisk or fork until batter is smooth.
2. Microwave for 1 1/2 minutes. If cake is not done, microwave for an additional 30 seconds. Serve while warm. Top with whipped cream if desired.
