Quinoa Burgers

The Quinoa Burgers are so colourful. We served the Quinoa Burgers with Roasted Cherry Tomato Salsa which I will post next week.Ingredients
- 1 cup uncooked quinoa
- 2 cups water
- 3/4 cup shredded cheddar cheese
- 1/2 cup low-fat cottage cheese
- 2 medium carrots, finely grated
- 1/4 cup parsley, finely chopped
- 3 eggs
- 3 tablespoons flour, add more if needed
- 1/2 teaspoon sugar
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1/8 teaspoon garlic powder
Instructions
In a medium saucepan, bring 2 cups of salted water to a boil. Reduce heat and add quinoa. Cover and cook for 17 minutes, or until all water is absorbed. Cool.
In a large bowl, combine cheddar cheese, cottage cheese, carrots, parsley, egg, flour and all the seasonings.
Add quinoa and mix well. If it’s still wet, you can add 1 or 2 tablespoons more flour. Mixture will be sticky.
Use a 1/4 cup measuring cup to measure equal amount of the mixture and roll into balls. Put on a plate, cover and place in the refrigerator for 20 minutes before cooking.
Heat a frying pan with olive oil over medium-low heat. Drop the quinoa balls into the pan and lightly flatten to 1/2 inch thick.
Fry until golden-brown, about 4 minutes on each side.
Serve with slider thins.
Serve with Roasted Cherry Tomato Salsa which I will post next week.

I'm not one to reach for an "alternative" burger, but these look good! I have never cooked with quinoa before but I am interested in trying new recipes. Thanks for this recipe.
Do you know what you could use instead of eggs?

@Eyes_Herself@xanga - The eggs help to 'bind' it and add moistness. I'd say maybe a little soft tofu mixed with the canola oil that Emma suggested.
I'm going to substitute cornstarch or rice flour for the wheat flour....
