  • Recipe: Tart It Up With Lemon Curd


    Sometimes my sweet tooth creeps up on me when I least expect it. A quick and easy solution is lemon curd. It satisfies all my cravings being sweet, tart, creamy and rich all at once. Lemon curd is delicious on its own spread on toast, or can be the centerpiece of an extravagant dessert.

    Lemon Curd
    for about 1 cup

    4 egg yolks
    1/4 c lemon juice
    1/2 c sugar
    zest of 2 lemons
    1/4 t salt
    4 T butter, cut into cubes

      1. In a small pot combine the egg yolks, lemon juice, sugar, zest, and salt.
      2. Cook the mixture over medium heat while stirring constantly. The curd is cooked when it begins to steam and thicken, do not let boil.
      3. Remove from heat and strain.
      4. Add the cubed butter and stir until melted and combined.

    The chilled curd can keep in the refrigerator for up to one week.
