
Sometimes my sweet tooth creeps up on me when I least expect it. A quick and easy solution is lemon curd. It satisfies all my cravings being sweet, tart, creamy and rich all at once. Lemon curd is delicious on its own spread on toast, or can be the centerpiece of an extravagant dessert.
Lemon Curdfor about 1 cup4 egg yolks
1/4 c lemon juice
1/2 c sugar
zest of 2 lemons
1/4 t salt
4 T butter, cut into cubes
- In a small pot combine the egg yolks, lemon juice, sugar, zest, and salt.
- Cook the mixture over medium heat while stirring constantly. The curd is cooked when it begins to steam and thicken, do not let boil.
- Remove from heat and strain.
- Add the cubed butter and stir until melted and combined.

The chilled curd can keep in the refrigerator for up to one week.

My mom makes a limoncello tart using lemon curd...it looks a lot like the one pictured above, but the crust is soaked in my dad's homemade limoncello, and then she tops it with whipped cream and fresh fruits. It's really good and very lemony. :)

I love lemon curd! I enjoy just a simple lemon tart, although I have never tried making it on my own.
