
Is there really a better appetizer than bacon wrapped scallops? They are delicious. Well, I suppose if you don't eat shell fish or bacon then this may not be your cup of tea. I love scallops and bacon. Together grilled and covered with barbecue sauce pulls this snack over the top.
Even before working at a seafood restaurant and gaining an intense appreciation of seafood, especially scallops, I loved bacon wrapped scallops.
Whenever my oldest sister arrived for her week of summer vacation at our beach house in August, my brother-in-law always grilled bacon wrapped bbq scallops at least once. He would buy around a dozen large sea scallops, wrap them in bacon, and toss them on the grill before dinner. Everyone would eat one or two, but want another when finished.
While working at a seafood restaurant I remember prepping and broiling 50 bacon wrapped scallops for a party tray and itching to pop them into my mouth. I somehow swallowed my cravings, but managed to convince my boss to allow me to make them later in the summer for the kitchen staff on a slow day.
I'm eager to visit the shore towns to buy fresh jumbo sea scallops. I can't wait to fire up the grill and wrap them in bacon. Summer can't arrive soon enough.

Yes, I have. Mostly anything bacon wrapped makes a good appetizer.
