  • Satisfying Your Coconut Macaroons Cravings

    George's Coconut Macaroons

    All this macaroon talk is driving me crazy. The warm winter and early spring has my stomach aching for summer. In the summer time, a constant late night treat is a chocolate covered hot coconut macaroon from George's in Ocean City, NJ.

    For all those people who love coconut macaroons, I have two suggestions to help you with your macaroon cravings.

    Yes, you can order these delicious cookies and have them delivered to your home. These macaroons are the best I've ever eaten and totally worth the shipping and handling.

    The only downside is that you don't get to savour each and every bite of the hot and fresh cookies while lounging on a boardwalk bench in the middle of summer. I won't order them for delivery. I eat my macaroons at the beach.

    2. Make Your Own Macaroons

    Desperate to ease my coconut pains, I searched far and wide for a homemade coconut macaroons recipe.

    Thanks to my Google Reader, I discovered  a recipe from lovefromtheoven.com. These "Easy Coconut Macaroons" come from McCormick. The directions look very easy. The macaroons sound absolutely delicious. I'm sure to make these within the next couple days since summer and George's macaroons are still months away.

    Do you love coconut macaroons? Is there a special place you buy coconut macaroons or do you have a recipe you'd like to share?

    I like coconut macaroons but I rarely eat them.  I make them for my holiday cookie gifts, it is a regular in the lineup (reg: chocolate chip, oatmeal cranberry orange, coconut macaroons and chocolate fudge, jam crumb squares.  I might make another variety depending on how much time I've got).  The recipeI use is Ina Garten's, except I use 3 large egg whites instead of 2 extra large ones (she always uses extra large, but I only buy large eggs), and 1/2 teaspoon vanilla extract and 1/2 teaspoon almond extract instead of just 1 teaspoon of vanilla.  I made them for 2 holiday seasons, by the time came around to plan for the third year, I got emails and requests from my husband's coworkers that they were looking forward to the coconut macaroons.  I find that they are more popular with my parents' generation then my friends.

    Of course I do. Is there anything I don't like? I love coconut and I reach for macaroons often when I go to bakeries.

    I'm in a baking mood!  I made five small jars of apple pear peach preserves.  Maybe I'll make a galette or tart with remainder or turnovers .   I do want to make a really good poundcake, maybe two...You're super!!!

    Macaroons are amazing.  Last time I had them was when I went to Godiva and bought some macaroons dipped in dark chocolate.  Pretty good but expensive.
