  • Nothing To Eat? 5 Quick & Healthy Recipes


    Some of my favorite, most satisfying meals have been the ones that were thrown together when I was hungry and lazy and felt like there was nothing to eat.

    These are a few of my favorite easy meals, which I've made countless times. They require little effort, but never fail to leave you comforted. You probably have all the ingredients to make these dishes already hiding in your pantry and fridge.

    1. Chickpea and Tomato Stew

    Everything for this dish is in the pantry. Simmer together canned chickpeas and tomatoes with herbs and aromatics and serve over bulgar or rice.

    2. Frittata

    Mix together eggs with whatever is in the fridge, from frozen veggies to diced ham. Cut into wedges and serve with crusty bread and a simple salad on the side.

    3. Rice Bowl

    Top rice with steamed vegetables, avocados, pickles, or tofu. Garnish with hoisin or kecap manis for a quick and hearty rice bowl.

    4. Kale and Potato Stew

    Simmer together kale and potatoes with chicken broth. Keep it simple or make it interesting by adding sausage, beans, or pumpkin.

    5. Sardines on Toast

    I eat this almost everyday. Top toast with sardines are garnish with tomatoes, arugula, avocado, or anything else you can imagine.
