
Some of my favorite, most satisfying meals have been the ones that were thrown together when I was hungry and lazy and felt like there was nothing to eat.
These are a few of my favorite easy meals, which I've made countless times. They require little effort, but never fail to leave you comforted. You probably have all the ingredients to make these dishes already hiding in your pantry and fridge.
1. Chickpea and Tomato Stew
Everything for this dish is in the pantry. Simmer together canned chickpeas and tomatoes with herbs and aromatics and serve over bulgar or rice.
2. Frittata
Mix together eggs with whatever is in the fridge, from frozen veggies to diced ham. Cut into wedges and serve with crusty bread and a simple salad on the side.
3. Rice Bowl
Top rice with steamed vegetables, avocados, pickles, or tofu. Garnish with hoisin or kecap manis for a quick and hearty rice bowl.
4. Kale and Potato Stew
Simmer together kale and potatoes with chicken broth. Keep it simple or make it interesting by adding sausage, beans, or pumpkin.
5. Sardines on Toast
I eat this almost everyday. Top toast with sardines are garnish with tomatoes, arugula, avocado, or anything else you can imagine.

I love Frittata
All of those quick meals look and sound delicious. I'm not nearly as inventive with my quick meals.
Oh yeah, I've made variations of #1-3. Except I am not quite as versed in making frittatas so I just make eggs scrambled with whatever bits of meats, or if I only have veggies...then vegetarian versions. Or fry an egg and put it on the rice. If I have to clean out the fridge of veggies, I make vegetable soup. (Of course, I hope there is some chicken frozen in the freezer if that is the case.)
I always eat frittatas! Any egg dish is super yummy and fast.
But does anyone really *REALLY* keep kale on hand, just in case?

generally speaking if I have nothing to eat... I can't whip up anything... least of all a frittata
Rice is always a savior! There's so many different things you can do with it. Usually I'll make myself a small bowl of white or brown rice and i sprinkled garlic salt with a little pepper and mix it up. It's perfect for a snak, or even a midnight snack

@LKJSlain@xanga - my thoughts exactly. Like literally right now the only food I have is one pack of ramen and a tin of altoids. I don't even like ramen or altoids.

Stir fried brown rice with 2 eggs of course, soy sauce. I was too lazy to add anything else to this stir fry. Was very filling.
rice and beans. I prefer black beans myself.
kraft mac&cheese
salad- vague I know because a salad could contain anything. but thats the beauty of it.
baked potatoe
pancakes
grits + salt, butter, yum!
Damn this all sounds like fattening poor peoples food (besides the salad), but oh well its better than being hungry.
i'm going to have to try the rice with avocado and actually i need to try avocado in the first place haha. ew at the sardines one, but i can't eat seafood, meaning i don't want to.
I do not keep half of this stuff "on hand".. lol
Rice can go with anything. It's so versatile, tasty, and healthy for you. Well the brown rice is better for you than white rice. :)
