
The countdown is on! It's almost time for St. Patrick's Day. In my world, this means my roommate and I will decorate our apartment with green shamrocks and leprechauns, put Boondock Saints into the DVD player, and curl up for a fantastic, relaxing Irish celebration. Of course, we all know no holiday is a celebration without the proper food. So what will I be making this St. Patrick's Day?
I know very little about Irish culture and cuisine, so this year I plan to change that! I will be making the following recipes, which my very reliable sources (Pinterest and Allrecipes) have told me are the quintessential Irish dishes:

Irish Soda BreadThere seems to be hundreds of recipes for Irish soda bread out there, but four and a half stars out of 309 review on allrecipes.com is no easy feat. This recipe seems simple enough, and more importantly, I have almost all of those ingredients on hand! Win, win. (When I was little, I used to think the specks in the bread were chocolate chips. Imagine my 9-year-old disappointment when I found out they were raisins and/or caraway seeds!)

2.
Irish Lamb StewEven though the leg of lamb that this recipe calls for will likely break my wallet, I'm looking forward to having a nice, large bowl (or two) of this stew while tucked under a blanket watching the beautiful MacManus brothers defeat bad guys. Anything with thyme and potatoes has to be good right? Not to mention I can just throw it all into the crockpot and get started on recipe #3....

Irish Car Bomb CupcakesCan we just take a minute to stare at these beauties? Or better yet, click the link and look at all of this genius' tantalizing pictures. At first I was going to pick a different recipe out of sheer anticipated laziness, but I couldn't stop thinking about this one (and hey, I'm saving effort from the soda bread, right?). A Guinness and chocolate cupcake. Irish whiskey-spiked chocolate ganache filling. Bailey's Irish Cream icing. I can't even stand it.
Of course, I'll still be on the hunt for more recipes, so comment and let me know if you have any tips or better recipes for me to try! I can't promise I'll abandon the Irish Car Bomb cupcakes, though....
