Lazy days and Chicken Noodle Soup
It's been a pretty boring weekend thus far. The only thing constant and active has been the cold.
Jon and I decided to conquer a chicken noodle soup recipe together. Maybe it seemed so scary because it's a classic dish that I grew up with my mammie (grandmother) making and grandmas are always culinary geniuses. Really there was nothing to it. It's basically just a waiting game.
This is what we saw when we stared into the pot for 8 hours!
It was totally worth the wait. I was a little skeptical bringing that first spoonful to my mouth. It couldn't possible taste just like mammies, could it?

I am so completely proud of us!

I love one-pot meals! If I can plan ahead, I will prepare something that basically requires me to dump everything in the slow cooker/crockpot and flip the switch. No stirring, no worry of burning (unless your cooker is defective...that's another story). If I didn't plan ahead, and have too much to do or simply too lazy, I will get take out on the way home from work, or pour a bowl of cereal.
Mmmm I love homemade chicken noodle soup! I always make it the shortcut way and just buy a rotisserie chicken, strip most of the meat off it then boil the bones for an hour or two. Take out the bones, add some veggies and meat back in, season to taste, let everything stew for a bit, then add egg noodles and let those cook. Voila!
@vain_apathy@xanga - I think I'll try that method next time in a pinch. This was great but I was also hungry all day long waiting for it.
