Skinny Creamy Alfredo Sauce
I'll admit it. I have a weakness for Alfredo sauce. But just because I'm watching my calories doesn't mean I need to hate life and forgo one of the most wonderful things that the lovely Italians put on this Earth.
Fortunately for you and me, I have this skinny recipe for Alfredo- it's dangerously creamy and tastes like a calorie bomb, but it isn't!
Here, I'm enjoying it with fresh fettuccine from a local Italian market and 96% lean ground beef. Simple and delicious.
Servings: 4
Calories per serving (from MyFitnessPal): 144 | Carbs: 7g | Fat: 8g | Protein: 11g | Sodium: 400 mg
Ingredients:
- 1 tbsp light butter (e.g., Land O Lakes light butter)
- 2 cloves garlic
- 1 tbsp flour
- 1 1/4 cups low fat milk
- 1 oz fat-free cream cheese
- 3/4 cup freshly grated Parmesan cheese
- Ground pepper, to taste
Directions:
- Heat a skillet on low heat. Melt the butter in the skillet. Add garlic and saute until soft.
- Add flour; mix thoroughly.
- Slowly add milk on medium heat, stirring constantly.

- Stirring frequently, cook for about 5-8 minutes, until thick.

- Add cream cheese; mix thoroughly.
- Add Parmesan a little at a time, stirring constantly. Add a little milk if needed for the right consistency. Add pepper to taste.
- Serve immediately with main dish... and indulge away! :)

Alfredo sauce is my all time favorite.I hope this means portion size doesn't matter, right ?Using low fat and non fat dairy isn't necessarily the answer to make things more healthy. Studies show it actually increases your risk of being overweight. I made this recipe the other day and it was amazing. It was so rich and flavorful plus you get the added benefit of the protein.

@TheExperimentalChef - Low fat milk absolutely does not cause weight gain. Over-consumption of calories does. To be precise, 3500 additional calories above your BMR for one pound of weight gain.

@TheExperimentalChef - I'm not going to get into this. But "associated with weight gain" does not mean cause weight gain. As long as my milk is vitamin D fortified, and is giving me calcium and protein, I'm not complaining. :)

low fat ricotta and skim milk with some parmesan cheese has even less calories and is less processed and chemically. just a suggestion

THank you so so much for this. My boyfriend and I have been trying really hard to watch our weight... but we both love love italian food, and, more than that, love cooking together. this is PERfect.
Flour and dairy? Nothing skinny about that recipe.
@ShimmerBodyCream@xanga - I think the fact that it's lower in calories than typical Alfredo sauce is what she was getting at.
@ShimmerBodyCream@xanga - You can use omit the flour if that's your preference. As for the dairy, it's a little inevitable since it's alfredo. ;)
@LovelyKitchen - I can make healthy vegan alfredo, so not necessarily...
Everyone is entitled to their opinion, but sometimes it's best to remember the saying "If you can't say something nice, don't say anything at all." It's inappropriate to criticize people who are trying to make better choices in their life. Everyone has different tastes. Some go for low fat, some go for vegan imitations of real food. Regardless, no one gets out of this life alive. So, spread happiness and positivity. If you do want to debate and argue your point, there are so many places that are dedicated to that that you can chat on.
