My friend made these delicious fried
Crispy Stuffed Eggplant 炸茄子盒 for lunch on the eve of Chinese New Year. As soon as they were fried and plated, an auspicious symbolism came to mind. Golden good luck "coins" for the Lunar New Year!
What exactly are these fried goodies? They are made using sliced
eggplant stuffed with paste of ground chicken and shrimps, coated with batter and fried. For
vegetarian version, the stuffing was mashed tofu.
Then dip in flour batter to coat and deep-fry till stuffing is cooked and batter is crispy. Glad to learn this new snack item and I shall attempt to cook it someday when it is deep-frying day (whenever that is, forever it will be).

I do like eggplants, but I've only had it in limited types of preparations. My grandma used to make a similar stuffed eggplant dish, except she used the skinny Japanese eggplants rather than the big round ones. She stuffed it with a paste of minced pork, shrimp and shiitake mushrooms. She'd partially peel the eggplant, so it'll be striped, cut it on the diagonal into thick chunks. She'd cut a pocket for the stuffing, stuffed, lightly coated the outside with flour and pan fried. Then she'd make a sauce for it. Thanks for posting this, brought back a good memory
@babybug329@xanga - I'm glad to know these can be pan fried. I love eggplant and they look yummy but I just don't deep fry things. Oil is expensive and usually after one use it needs to be discarded.

@ccccourage@xanga - I don't really like to deep fry things either. First off, too greasy, but you're right, the oil can't really be used again as it retains flavors from the things you've cooked in it already and I would deep fry so infrequently that the oil would become rancid anyway. Not to mention that eggplant absorb oil like sponges! I don't have to exact recipe that my grandmother made, but that's all I can remember, it's been a long time. The thing I love about cooking is experimenting, and making things to suit your taste (and your family's). Happy cooking
