Sweet Potato & Edamame Quinoa Salad
This is a guest post by Teczcape. Sweet potatoes in rice?! That's so starchy! Calorie-counters beware. But I will swap the rice with quinoa, then tell you sweet potato is a nutrition powerhouse. Would you care for some? The trick is to ratio both "carbs" - sweet potatoes and quinoa such that the total is the same. Get me? And this one is made with nori seaweed, edamame, and sweet potatoes.
