Sweet potatoes in rice?! That's so starchy! Calorie-counters beware. But I will swap the rice with quinoa, then tell you sweet potato is a nutrition powerhouse. Would you care for some?
The trick is to ratio both "carbs" - sweet potatoes and quinoa such that the total is the same. Get me? And this one is made with nori seaweed, edamame, and sweet potatoes.
Roasted Chili Sweet PotatoIngredients: 1 sweet potato, peeled and cubed (Note1:
Garnet Yam is a good choice); dash of red chili powder; dash of ground coriander; dash of sea salt; dash of ground white pepper
Directions: Preheat oven 375-400F. Toss the cubed sweet potatoes with the seasonings and spices in a lined baking pan. Drizzle olive oil over the potatoes. Bake in oven for 30 minutes or till potatoes are cooked.

This looks delicious! Sweet potatoes and quinoa are both nutrition powerhouses and I love that they are so fiber-rich. Carbs definitely don't have to be evil and this recipe proves it. -Kati Mora, MS, RD, Kellogg's FiberPlus(R) Wellness Advocate
