Bacon Pancake Strips

What’s better than munching on a strip of bacon? How about munching on a strip of bacon embedded in a fluffy pancake?I wish I could tell you I came up with this myself. But I didn’t. I found the idea here. One look and I knew I had to make it. It fits perfectly with my obsession for creative breakfast treats and my love for bacon and pancakes.

This is so easy to make and so delicious. Fluffy pancake with crispy bacon in the middle. Yummy.To make this super easy, I used precooked bacon strips from Costco and Bisquick pancake mix.

Bacon Pancake Strips
Ingredients:
4 slices of precooked bacon
1 cup Bisquick
1 egg
1/2 cup milkDirections:
1. In a small bowl mix together bisquick, egg and milk. Mix until batter is smooth with a few lumps remaining.
2. Heat griddle or frying pan. Place strips of bacon about 2 inches apart. Cook for 1-2 minutes until bacon is crispy and close to desired doneness.Spoon pancake batter on top of each strip so it covers strip of bacon and outlines the outside of the bacon. When pancake is done, flip to other side to finish cooking. Serve while warm.Adapted from Eclectic Recipes

Or you can just make an actual pancake with bacon strips embedded inside.
This just reminded me of EpicMealTime, and I would totally want to make some.
Funny, I was just fixing breakfast for an early dinner. This sounds yummy and so easy to fix. I do love bacon, so this is a must tryi. Thanks.

my favourite waffle place here in vancouver, miura waffle milk bar, embeds bacon strips or slices of ham in their waffles, for their bacon egg & cheese or ham egg & cheese waffles. yummy!
Serve topped with maple syrup, of course.
