  • Bacon Pancake Strips

    What’s better than munching on a strip of bacon? How about munching on a strip of bacon embedded in a fluffy pancake?

    I wish I could tell you I came up with this myself. But I didn’t. I found the idea here. One look and I knew I had to make it. It fits perfectly with my obsession for creative breakfast treats and my love for bacon and pancakes.

    This is so easy to make and so delicious. Fluffy pancake with crispy bacon in the middle. Yummy.

    To make this super easy, I used precooked bacon strips from Costco and Bisquick pancake mix.

    Bacon Pancake Strips

    Ingredients:

    4 slices of precooked bacon
    1 cup Bisquick
    1 egg
    1/2 cup milk

    Directions:

    1. In a small bowl mix together bisquick, egg and milk. Mix until batter is smooth with a few lumps remaining.
    2. Heat griddle or frying pan. Place strips of bacon about 2 inches apart. Cook for 1-2 minutes until bacon is crispy and close to desired doneness.Spoon pancake batter on top of each strip so it covers strip of bacon and outlines the outside of the bacon. When pancake is done, flip to other side to finish cooking. Serve while warm.
