  • Sausage McBiscuit Cups

    This is the final variation of my McDonald’s inspired breakfast sandwich cups. So far I’ve recreated bacon egg mcmuffin cups, sausage mcmuffin cups, and bacon biscuit cups. Now I bring you Sausage McBiscuit cups, which actually recreates what used to be my favorite breakfast sandwich, so I’m not sure why it took me so long to make.

    I have many other breakfast cup ideas, but I think I’ve had enough of the McDonald’s breakfast sandwich inspired ones for now.

    Like all the other breakfast sandwich cups I’ve made, this is easy to make and very portable. You can bring it to a brunch, grab one for breakfast on your way out, etc.



    I decided to bake these in my oversized/Texas style muffin pan, though if you don’t have one you can definitely cut down on the biscuit dough to make a smaller version.

    Even with the oversized pan, I had to cut down on the biscuit. I used premade Pillsbury biscuits, but once I put one biscuit inside, it took up so much room, and I knew it would only rise higher once baked. So I actually cut the biscuit dough in half, across, so that it was reduced in half in height. This made the cups much more manageable.
    The biscuits were soft and fluffy. The sausage was good and the egg balance the cups. Yummy yummy.

    Sausage McBiscuit Cups

    Yield: 6

    Prep Time: 15 mins

    Cook Time: 20 mins

    Total Time: 35 mins

    Ingredients:

    6 eggs
    3 pieces of Pillsbury Grand buttermilk biscuit dough
    6 precooked frozen round sausage patties

    Directions:

    1. Coat six oversized muffin pan molds with oil. Preheat oven to 375F.
    2. Take one piece of biscuit dough and slice it in half horizontally so that you reduce the height in half but not the diameter. Repeat wit remaining dough pieces.Place dough into oversized muffin pan molds.
    3. Using a biscuit cutter (the inner piece) or small round cookie cutter, cut a hole into the center of each sausage, just large enough for the egg yolk to sit on. If the hole is too large, the egg yolk will slip under. Place sausage on top of biscuit. You can use the inner scraps for something else or eat them while making these.
    4. Crack an egg, placing the yolk in the center where the hole for the sausage patty is.
    5. Bake for about 15-20 minutes or until egg white and biscuit is completely cooked.
