Chili Corn Fritters
INGREDIENTS
+adapted from the Joy of Cooking
- 8 oz. canned corn, drained
- 1 egg yolk
- 1 tablespoon flour
- 1/4 cup chopped chives
- 1/4 tsp salt
- 1 tsp lemon juice
- fresh ground black pepper
- 1 small red chili, de-seeded, finely chopped
- 1 egg white
- extra virgin olive oil
Combine the first eight ingredients in large mixing bowl and mix well. Gently mash the corn a little with a fork until it's a little pulpy.
In a separate bowl, beat egg whites until peaks form. Gently fold into corn mixture to make light and fluffy. Please do not over mix.
Heat oil in large skillet over medium-high heat and drop in corn mixture by the heaping tablespoon.
Cook 2 minutes on the first side (until golden brown).
Then turn and cook until golden brown on the other side.

Serve corn fritters with Thai sweet chili sauce.

Corn fritters used to be one of my favorite comfort foods.
I say used to be, because in my last apartment, the stove turning on in general would send the fire alarm into a panic, so I dreaded using it, especially when it came to heating oil on the top.
Anyway, these look amazing, and I think it's something that I will try out again now that I'm in a place with a fire alarm that isn't so picky. :)
These look dangerous...I want a whole plate of them! Thanks for the recipe, must try soon.
