This is a great vegetarian Indian dish, that's aromatic, flavorful and easy to prepare.
INGREDIENTS - 2 medium sized potatoes, chopped
- 1 head cauliflower, separated into florets
- 1 teaspoon ginger paste
- 1 small onion, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper powder
- 1 teaspoon garam masala
- cilantro, chopped
- salt, to taste
- extra virgin olive oil

Heat oil in a large skillet pan, and add ginger paste and onions, fry until it's slightly browned.

Next, add turmeric, cayenne, cumin, coriander, garam masala and a bit of salt. Mix together until the spices become aromatic.

Now add the potatoes and cook over medium heat for about 10 minutes, or until the potatoes are barely tender.

Add the cauliflower and cook, stirring occasionally, for about 5 more minutes.


Add about 1/4 to 1/2 cup of water, and cook until the vegetables absorbs the masalas. Season with a bit more salt, if required.

Finally, add the chopped cilantro and mix well.



Enjoy with a bowl of hot steamed rice.
