My Delicious Thanksgiving Recap
I hope everyone had a great Thanksgiving filled with tons of yummy food, family and friends! As always, my Thanksgiving was lovely and delicious. I ate myself into a food coma as I watched my sister, aunts and cousins have their own dance party in the dining room...standing on chairs. Needless to say, my family holiday parties tend to get a little...um, crazy (in a good way).
There were about twenty of us for a full sit down dinner. My aunt always has the prettiest table settings, and they are always decorated so festive for their appropriate holidays. The table was filled with golds, reds and browns with a pretty floral centerpiece. Our names were written on mini pumpkins instead of place cards.
Moving to the stars of the night...the food. One of my favorite parts about holiday parties (or any party, really) are the finger foods. I go crazy for them and once I start eating them, it's hard for me to stop. I loaded my plate with spinach dip, crackers, mozzarella balls and Brie with orange jam, sliced almonds baked inside Pillsbury crescent dough (my dads yummy recipe, which I'm addicted to).

As we sat down for dinner, I searched the giant table for my favorites like mashed potatoes, stuffing, cranberry sauce, baked mac & cheese and sweet potatoes with melted marshmallows. I carefully loaded my plate to make sure my food wasn't touching...although this was difficult. Thankfully, there was no ham at our Thanksgiving and I definitely made sure to pass on eating the turkey. As previously mentioned, I hate both ham and turkey for many reasons. I think for the first time in a while I wasn't able to finish the food on my plate...and I didn't even go for seconds. Gasp!

For dessert, I stuck to the fruit since I'm not the biggest fan of pies. And of course I enjoyed the red velvet cake pops I made, which were dipped in milk chocolate. Unfortunately, I completely forgot to take a picture of them but they were amazing, and definitely one of the best cake pops I have made so far.

You should post your recipe for your cake pops! Those sound awesome! Glad you had a great Thanksgiving.

If you want to make pops..before you dip them in chocolate dip the bottom of the cake ball into a little bit of chocolate and then stick in the lollipop stick. This makes the lollipop stick hold to the cake better. Or you can dip the end of the lollipop stick in chocolate and then stick it into the cake ball. Either way works! I hope this made sense :)
I did eat a ton of food on Thanksgiving...of course, I had to cook it and it was very exhausting but it was well worth the effort. Especially I hardly had to cook anything for 3 days after. Well, I did try to make the leftovers more interesting because I am not a huge fan of leftovers, but I eat them because it's cost effective. I'm guessing a 13.5 pound turkey was far too much turkey for 4 diners. With the leftovers came the following meals (for my husband and I):
1. Turkey scramble with a side of stuffing
2. Shredded turkey with gravy over mashed potatoes, like in the cafeteria during my school days
3. Turkey salad sandwich, spread was smashed candied yams
4. Turkey cranberry quesadilla
5. Turkey veggie soup with noodles
I thought of other possibilities of using up turkey, but thankfully it was all gone by then.
* Green chile turkey enchiladas
* Turkey, veggie pasta toss (gravy would be the sauce)
* Shredded turkey tacos
I went to Golden Corral for Thanksgiving. My big family holiday get-together is at Christmas, so I'm usually by myself at Thanksgiving. I can't get up that much enthusiasm in making a great big meal just for me, so I usually go out to eat.
