  • Chocolate Chip Pancakes for Breakfast

    So I decided to make chocolate chip pancakes for breakfast. I blame this past week's food porn. It gave me a craving. I used a boxed baking mix and followed the recipe from the side of the box.

    Ingredients:

    • 2 cups of baking mix 
    • 1 large egg
    • 1 1/3 cups milk
    • 2 tbsp sugar
    • 1 tsp vanilla extract
    I tossed in chocolate chips into the batter and poured it onto the griddle.  Unfortunately, the chips sank to the bottom of the mixture so I had to place them onto the pancakes by hand, which was a bit time consuming.

    I learned the hard way the last time I made chocolate chip pancakes not to overload on the chips or else it overpowers the whole pancake.

    Does anyone else like chocolate chip pancakes?  Or do you have a different preference?

    I love the cinnamon pancakes at IHOP when they're available. I found this recipe for chocolate pancakes online awhile ago. The were developed by Marcus Samuelsson.


    4 oz bittersweet chocolate, chopped


    8 Tbsp butter, cut into chunks, plus 2 to three Tbsp, at room temperature


    2 large eggs


    2 large egg yolks


    2 Tbsp plus 2 tsp sugar


    5 Tbsp flour


    Melt the chocolate and butter together. Whisk together eggs, egg yolks and sugar. Whisk in the melted chocolate and butter. Sift the flour over the top and fold it in. Melt 1 Tbsp of butter over low heat in a larage nonstick saute pan. Drop a heaping tablespoon of batter into the pan and cook for 2 minutes, then turn and cook on the other side. Transfer pancake to a plate. Repeat with remaining batter, adding more butter to the pan as neccessary.


    I've only made them once because they're so fattening, but, boy, are they good!

    @whyzat@xanga - Do these chocolate pancakes rise (get fluffy)?  Maybe from all the eggs it does.  Does sound delicious though.


    I usually prefer plain buttermilk pancakes, but chocolate chip or bananas are welcome, too.  I used to make pancakes from a mix, but I've found that making them from scratch isn't that much more work, but much tastier.  If I make chocolate chip pancakes, I try to look for the mini chips at the store, or chop chocolate bars at home.  I use the recipe from the Better Homes and Gardens New Cookbook (you know, the red plaid one), or I use my husband's grandma's recipe for crepes.

    haha last time I had a craving for chocolate chip pancakes, I made half the batch plain (for anyone else who wanted some) and then just ended up eating the plain ones.

    Ooh! I LOVE making these from scratch and my sister is obsessed with my chocolate chip pancakes! I only do it on occasion though; it's way too sweet for me, even with semi-sweet chips.
