
Pumpkin is the trending topic for all foodies lately, but I need to face facts: I'm a sucker for all things pumpkin (including the pumpkin milkshake I devoured today). A friend of mine is dating a guy who's parents used to own an inn and one of their favorite things to serve in the fall was pumpkin waffles with an apple cider syrup. So, we got our hands on the recipe!
| What you'll need for the apple cider syrup: |
One cup apple cider
Half teaspoon cinnamon
One eighth teaspoon ground cloves
Quarter teaspoon ground nutmeg
One and a half tablespoons orange juice (fresh squeezed, if possible)
Quarter cup brown sugar
Quarter cup maple syrup
Quarter cup corn syrup
One tablespoon butter (or margarine)
Take a small pot and put the apple cider, the cinnamon, cloves, nutmeg, and orange juice in it. Boil for five minutes. Then, add the sugar, syrup, and butter and boil for fifteen minutes. Keep it heated on the stove.
What you'll need for the pumpkin waffles:
Two cups flour
Quarter cup sugar
Four teaspoons baking powder
One teaspoon salt
One teaspoon cinnamon
One teaspoon ginger
Quarter teaspoon cloves
One and a half cups milk
One can of pumpkin purée (I prefer Libby's)

Four eggs, separated
Three quarters cup melted butter
One and a half sticks butter
Combine dry ingredients into a bowl. Then, wisk milk, pumpkin, and egg yolk in a separate bowl. Stir in your wet ingredients into the dry.

In a separate bowl, beat egg whites until stiff and add melted butter to the mixture. Add your egg whites to the mixed ingredients last.

Beat. Pour your batter into the waffle maker! This recipe make about 6-7 waffles.
This batter can also be used to make pumpkin pancakes if you do not have a waffle maker!
