  • Pumpkin Spice Muffins




    I have been quite fond of pumpkin lately. I first fell in love with Starbuck's Pumpkin Spice Latte. Next, it was the Pumpkin Cheesecake from Baked Expectations. And now, it's these light and fluffy pumpkin spice muffins.



    INGREDIENTS
    Adapted from Flour by Joanne Chang
    Makes 10 large muffins

    • 1/2 cup unsalted butter, softened
    • 1 cup brown sugar
    • 2 extra large eggs, room temperature
    • 1 cup pumpkin puree
    • 1 1/2 cup unbleached all-purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon nutmeg
    • 1/4 cup pepitas (pumpkin seeds) to top






    Position rack in the center of the oven and preheat oven to 350 F. Line a standard 12-cup muffin tin with muffin papers. Using a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar on medium speed for 2 to 3 minutes, or until the mixture is nice and light. Scrape the sides and bottom of the bowl with a rubber spatula.




    On low speed, add the eggs in one at a time, beating well after each addition. Add the pumpkin puree on low speed until combined - don't worry if the batter looks a little curdled because it will firm right up.




    In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg until well mixed.




    Pour the wet mixture into the dry ingredients and fold carefully with a spatula until the dry and wet ingredients are well combined.




    Keep in mind not to overmix as you are just joining the wet and dry ingredients.




    Spoon the batter into the muffin cups, dividing it evenly and filling the cups to the rim. Sprinkle the tops with pumpkin seeds.




    Bake for 35 minutes, or until the muffins are golden brown on top and spring back when pressed in the middle.




    Let cool and then place on a wire rack for an additional 20 minutes.
