I had bought some blueberries with the intention of satisfying my craving for blueberry pancakes, but I have been putting it off for a couple of days since I was sick and didn't really feel like making anything early in the morning. Today, I finally got the chance to make these beautiful fluffy blueberry pancakes.
The blueberries were a bit sour since they weren't in season, but aside from that, they were absolutely perfect. It's Thanksgiving today in Canada, so I wish all my fellow Canadians a Happy Thanksgiving!
Ingredients: recipe adapted from Cooks Illustrated - 1/2 cup milk
- 1/2 cup unbleached all-purpose flour
- 1/2 tablespoon granulated sugar
- 1/2 teaspoon baking powder
- pinch of salt
- 1 large egg, separated
- 1/2 tablespoon unsalted butter, melted and cooled slightly
- 1/2 cup fresh blueberries, rinsed and dried
Directions:1. In a medium bowl, whisk together the flour, sugar, baking powder and salt and set aside.
2. In a separate bowl, whisk together milk, egg yolk and the melted butter, then add it to your dry ingredients and whisk until just combined.

3. Whisk the egg whites using an electric stand mixer until it reaches stiff peaks, and pour it in the bowl of pancake mixture. Gently fold it into the mixture until you don't see any more white streaks.

4. Heat a teaspoon of oil in a non-stick skillet set over medium heat. Once the oil starts shimmering, use a piece of paper towel to wipe the pan so only a thin, even coating of oil covers the bottom. Use a 1/4 cup measure to portion the batter into the pan.
5. Top each pancake with about a tablespoon of blueberries. Cook on the first side until the edges are set and bubbles form on the surface (about 2 minutes). Use a spatula to flip the pancakes and cook for another 1 - 2 minutes on the other side, or until golden brown and cooked through.
6. Repeat with remaining batter, adding more oil to the pan if necessary.
Note: It is important to not stack your pancakes until you are ready to serve them because they will get soggy.

Top your pancakes with some more fresh blueberries and dust with some confectioners sugar.

And of course, you can't have pancakes without some maple syrup.

this should've been my breakfast this morning. i don't generally eat pancakes, so i don't really have a favourite, but typically anything with fruits and cinnamon in 'em and i'm sold.
