  • Creamy Avocado Pudding




    Sounds weird right? Well, don't knock it till you try it! Topped with pistachios makes it even better!

    INGREDIENTS


    1 1/2 teaspoons gelatin
    1/2 cup of milk
    1 ripe avocado
    1/2 lemon, zested and juiced
    1/4 cup of condensed milk
    shaved chocolate, for garnish
    crushed pistachio, for garnish







    Place 1/4 cup of milk in a small bowl, sprinkle gelatin over and stir to dissolve. Add the rest of the milk to a small pot and warm over low heat.




    Pour a small amount of the warmed milk into your bowl of gelatin mixture and stir. Pour the mixture into the pot of warmed milk and stir gently.







    Place the avocado, lemon juice, lemon zest, condensed milk, pinch of salt and the warmed milk, and puree until smooth.






    Divide the pudding evenly into serving cups, with plastic wrap directly over it, and refrigerate for approximately one hour to allow it to set.







    Just before serving, garnish with some shaved chocolate and crushed pistachio.
