I've been meaning to make hummus for a while now, and coincidentally I had a can of chickpeas laying around and some other leftover ingredients from something I made a few days ago so I decided to quickly whip up some hummus. This is definitely one of the best hummus I've ever tasted. I was even licking the hummus off of the spatula. That's just how darn good it was!
INGREDIENTS: - 1 can of chickpeas (garbanzo beans), washed and drained
- 4 clove of garlic
- 1/4 cup of olive oil
- 2 tablespoons of tahini (middle eastern sesame paste)
- juice of 1/2 lemon
- lemon zest from 1/2 lemon (reserve some for garnish)
- salt to taste
- freshly ground black pepper
- 1/4 cup roasted tomatoes

Add all ingredients in a food processor or blender and process until it forms a thick smooth paste. As you can see, I put all of the ingredients, except for the tomatoes as there was no room, into this small container and attempted to blend the ingredients together with my stick blender, but it was really difficult because the chickpeas kept getting stuck and prevented the blade from doing its work. So I decided to use a larger container and poured everything in it and I was able to blend the ingredients with better ease.

Lastly, I added the roasted tomatoes and continued to blend everything together until it was well incorporated and seasoned with a bit more salt and pepper to taste.

Place the hummus in a bowl and garnish with some lemon zest. Serve it as a dip with flatbread, pita, bread, crackers, or multigrain chips as I did here, and you can even use it as a spread on burgers or even sandwiches!
