Recipe: Spaghetti with Mushrooms, Eggs, and Bacon Bits
On Monday, my classes got canceled due to the uncertain situation of the mass transit as a result of Hurricane Irene and flooding.
Since I had nothing special planned, I decided to whip up a simple spaghetti dish. I was in a mood for eggs, mushroom, and spaghetti. I was debating whether to pick up bacon from the market, but than decided not to because I tend to restrict myself from bacon because it's just far too fattening for me. I improvised with bacon bits.
Ingredients:
- Button Mushroom (Sliced)
- 2 Eggs
- Garlic (Chopped/Sliced)
- Spaghetti
- Spices: Oregano, Basil, Pepper
- Condiments: Salt, Bacon Bits, Garlic Powder
- Oil
- Water
Bring a pot of water boiling vigorously and toss in as much spaghetti for whatever amount of people you are serving. Add touch of oil so it keeps the spaghetti from sticking to the pot and add a touch of salt to bring the temperature in the water higher.
Boil the spaghetti until it's reached "al dente" so it's firm, but not hard. Scoop spaghetti into a separate bowl without any water as possible. Add mushrooms into the same water and pot and bring it to a boil.

Get rid of the water and wait until the pot or pan is clear of water and add some garlic with a touch of oil. Let the aroma of the garlic permeate as it is sizzling in the oil. Add eggs and mix until it's well-cooked.


Next, add spaghetti and mushrooms with the eggs. Stir well. Now, you're ready to add spices and other condiments. So, I've added basil, oregano, garlic powder, salt, pepper, and of course the bacon bits. Mix well.

Voila! The spaghetti with eggs and mushroom, topped with bacon bits was a light spaghetti dish that I enjoyed thoroughly. I normally don't cook spaghetti with other ingredients besides various pasta sauce, tomatoes, mushrooms, chicken cutlets, and such.
It's always nice to incorporate different ingredients into a versatile product such as spaghetti or pasta. The bacon bits added somewhat of a smokiness to the spaghetti. If I wasn't so worried about overly fattening meat, maybe I should have added actual bacon bits to it.

i wanna try this! i usually prefer pasta with tomato sauce, but i like trying different ingredients as well.
You should have used real bacon, not just bacon bits. Everything's better with bacon.
I usually make pasta with tomato based sauce like marinara or bolognese (I used to make it with ground beef but since switched to ground turkey, it's much leaner and often less expensive), but occasionally have it with cream based (alfredo) or cheese (like mac and cheese). Other times, no sauce, but kind of like chow mein, mixed with thin shreds of meat and veggies. When I saw "egg" in the title I immediately thought of pasta alla carbonara! That would involve frying bacon/pancetta/other fatty pork product, mixing with noodles and making a sauce of raw eggs, cheese and a fat, such as butter or cream. I read somewhere that the olive oil is not to prevent the noodles from sticking to the pan or other noodles, but to prevent the pot from boiling over.

This looks really good. They make something similar to this at a local Italian place. I'm a vegetarian, though, and I've found that when you cut the bacon out of a recipe that calls for bacon, it ends up being completely flavorless. Maybe Bac-o's would work?

I'd try that. I usually just use red tomato sauce, not even fettucinni and anything else is like from another planet to me.
I want to try this one. I never have bacon with spaghetti before.
