
I only had two ingredients on hand - white button mushrooms and eggs, so I made the max out of the min.

INGREDIENTS:
- 4 eggs (beaten)
- 200g of mushrooms (sliced; you can use other kinds of mushrooms)
- olive oil
- 1 tablespoon oyster sauce
- fish sauce
- black pepper
- fried shallots


Heat olive oil in a large pan over medium high heat and saute the mushrooms until softened and browned.

Add oyster sauce and mix well.

Bring down the heat to medium or low medium and add beaten eggs, drizzle a bit of fish sauce and season with some black pepper.

Lastly, add some fried shallots.

Serve hot with a bowl of cooked rice.

Not that different from a mushroom omelet, and it looks delicious.
Ohh you do it a different way than I do!! I guess since I cook more mexican style and you cook more well your style. :)
I always add salsa to mine. Instead of oyster sauce. And serve with beans, instead of rice, haha :)

Yum! I often add other chopped veggies like onions, bell peppers and spinach along with the mushrooms. I love veggie scrambles, it is delicious and doesn't make you feel as heavy as if you made omelets/scrambles with bacon or sausage.
This is a nice and easy way to enjoy mushrooms, and make a tasty difference to that simple scrambled egg! Yummy!

Haha, I have scrambled eggs with oyster sauce, too, but I don't mix it in beforehand. It's a simple dish my family makes -- I think I've seen something similar to it in Chinese restaurants (real Chinese restaurants) -- scrambled eggs, sliced up bits of ham, and peas over rice and then top it off with oyster sauce.
