  • Oven "Fried" Chicken Tenders

     I'm like the Bubba (Forrest Gump anyone?) of chicken. Barbecue it, bake it, boil it, broil it, bake it, or saute it and I'll devour it. Seriously, my mom even told me one time that my favorite food when I was a baby was a jar of chicken and noodles. 

    I generally try to eat healthy and a great way to do that is to try to cut the calories in your favorite dishes. I love chicken tenders and a super easy way to prepare and make them healthier is to bake the chicken instead of frying it. Not to say that I don't love fried foods (nothing wrong with a little indulgence now and then) but frying has always intimidated me, not to mention the whole oil spattering thing. Ouch. Here is my go-to recipe that only requires a few ingredients (just three!) and only takes about 25 minutes to bake.

    Here's what you'll need:

    • 1/2 cup Italian Salad Dressing
    • A pack of Saltine crackers
    • 2-3 chicken breasts, cut into strips

    1. Preheat the oven to 350 degrees.

    2. Marinate the chicken. I recommend marinating for about an hour or two. According to startcooking.com, two hours is about how long it takes for poultry to absorb the flavor of the marinade and marinating too long can actually cause the meat to toughen. 

    2. In a food processor, crush the Saltines until they become crumbs. You can add salt and pepper too if you'd like but because the chicken is already seasoned, I usually don't feel the need to do so.

    3. Coat the marinated chicken in the Saltine crumbs and place them on a non-stick foil-lined baking sheet. Makes for easy cleanup!


    4. Bake the chicken tenders for 25 minutes and then enjoy 


    If you share my love of chicken tenders, you should definitely try this out! You don't have to be limited to just crackers either. You can use different cereals (Chex, Corn Flakes) or bread crumbs if you'd like.
