My Idea of the Perfect Breakfast Meal
Chewy, yet crisp. Runny, fresh, and cheesy…with BACON! Now that’s what I call my opinion of a textural masterpiece at breakfast (or dinner!)
Ingredients:
- 1 pound bakery white bread, cut into 1-inch cubes (16 cups)
- 1/4 cup extra-virgin olive oil
- 1 pound sliced applewood-smoked bacon, cut into 1/2-inch pieces
- 1 large onion, halved and thinly sliced
- 1 28 ounce can whole Italian tomatoes, drained, chopped and patted dry
- 1/2 teaspoon crushed red pepper
- 1/2 pound extra-sharp cheddar, shredded (about 2 cups)
- 1/2 pound Monterey Jack cheese, shredded (about 2 cups)
- 2 tablespoons snipped chives
- 1 3/4 cups low-sodium chicken broth
- Salt
- 8 large eggs
- Hot sauce, for serving
Directions:
1. Preheat the oven to 350°. Lightly oil a 9-by-13-inch glass baking dish. In a large bowl, toss the bread with the olive oil and spread on a large rimmed baking sheet. Bake for about 20 minutes, tossing once or twice, until the bread is golden and lightly crisp.
2. Meanwhile, in a large skillet, cook the bacon over moderately high heat, stirring occasionally, until crisp, about 8 minutes. Transfer the bacon to paper towels to drain; reserve 2 tablespoons of the fat in the skillet.
3. Add the onion to the skillet and cook over moderate heat, stirring occasionally, until softened, about 5 minutes. Add the tomatoes and crushed red pepper and cook until any liquid is evaporated, about 3 minutes.
4. Return the toasted bread cubes to the bowl. Add the contents of the skillet, along with the bacon, shredded cheeses, chives and broth. Stir until the bread is evenly moistened. Season with salt. Spread the mixture in the baking dish and cover with lightly oiled foil.
5. Bake the bread mixture in the center of the oven for 30 minutes. Remove the foil and bake until the top is crispy, about 15 minutes longer. Carefully remove the baking dish from the oven and, using a ladle, press 8 indentations into the bread mixture. Crack an egg into each indentation. Return the dish to the oven and bake for about 15 minutes, until the egg whites are set but the yolks are still runny. Serve the breakfast bake right away with hot sauce.

I like having toast and butter
I prefer when we go on holiday (all inclusive) bread rolls, cheese, cold meats (ham, turkey etc) pancakes, omelettes in the hotels we stayed in Mexico are cooked in front of us(with toppings of our choice)
usually I have just breakfast cereal at home in the United Kingdom.
That looks amazing!! I love bacon & eggs for breakfast, and this definitely would fit my tastes. Thanks for sharing the recipe & photos.
man that looks great. mmmmmm. though id have to eat a small, teenie portion to be able to not feel guilty lol.doesnt fit in with my diet plan. sigh. yummmmmm. plus, heart attack anyone?
This looks a breakfast food stuffing with baked eggs! My favorite Sunday breakfast includes an omelet with onions, mushrooms, bell peppers and spinach with shredded cheese; crisp cooked bacon; country potatoes and toast. Side of fresh fruit, preferably oranges, bananas, strawberries and pineapple. And a little glass orange juice and cup of coffee. Not the best things for you, so I don't always indulge in it.
So...as for regular daily breakfasts: cold cereal with fruit and milk OR oatmeal with fruit OR leftovers. When I'm in a hurry or didn't plan for it, then I might drive through and get a bacon egg sandwich.

This recipe looks great, but I would be inclined to use the liquid from the tomatoes instead of some of the chicken broth. And I think I would want to add mushrooms to this -- probably instead of some or most of the onion.

I like two or three eggs, scrambled with onions and peppers, a small glass of orange juice, and a million cups of coffee.

That looks sooo good.
My ideal breakfast, albeit not very healthy, consists of garlic fried rice, a sunny-side up egg and tocino. (We hardly ever have tocino, so Spam or bacon works just fine ;])
I love bacon and eggs, and this is a new twist to the menu. I will eat mine daintily but I think my daughter would into the bread cubes with her fingers :)
Oh wow.. I like how the eggs sitting nicely with the sunny side up on a bed of toasted bread cube. Definitely eyecatching. I feel like tucking into that with my fork now.
