Recipe: Grilled Swordfish
On the trend of summer light menus, I've got one more great quick fix for you. As you probably know, during the summer I live with my parents. They are both extremely healthy (borderline health freaks, actually) and our dinners are some of my favorite things to share with you.
Today, it's grilled swordfish, corn on the cob, and potatoes.
In the summer, the best and most efficient way to get this done is to just throw it all on the grill. When we're just coming home from a day spent out at the beach, or by the pool at the tennis club, we like simple dinners. So, for marinade we have some go-tos that we buy in a super market. Any flavoring goes well.
First, marinade the swordfish.
Then, take the fish to the grill along with your corn in the husk and the potatoes.

Throw it all on the grill and cook the swordfish until the fish is no longer pink inside.
This takes less than 20 minutes total with preparation, is healthy, and delicious.

I'm drooling. Swordfish is one of my favorite foods.
I saw some swordfish i wanted to buy the other day but now this tempted me more. :) Just don't know what to marinade it with..

I don't think I've ever had swordfish but it look delicious!
I love grilled swordfish.
I like to fry it and add spicy sauce to mine.
