INGREDIENTS1 Large Russet Potato
1/2 Large Onion
1 Large Egg, lightly beaten
1 Teaspoon All-Purpose Flour
Salt & Pepper
2 Tbsp Oil
2 Tbsp Cilantro, chopped DIRECTIONS
Peel and grate the potato on the largest holes.

Keep grated potatoes in a bowl of cold water, allowing it to soak for a bit, then drain grated potatoes in a colander.

Squeeze out as much water as possible.

Grate the onion on the smallest hole into a large bowl.

Add the grated potatoes, egg, cilantro, all-purpose flour, salt and pepper and combine thoroughly.

Heat the oil in a large pan over medium heat. Spoon 1-2 tablespoons of the potato mixture per latke into the pan. Flatten slightly with a spatula and fry about 2-3 minutes, then flip over and continue frying until both sides are golden brown.

Remove the latkes from the pan and place it on a plate lined with paper towels to soak up the excess oil. Serve immediately while it's still hot.
