  • Artichoke & Chicken Pesto Pasta Salad



    When the weather gets hot, our food usually gets cold. Take this refreshing cold pasta salad for example, complete with the fresh kick of cilantro and mouthwatering artichoke!

    Ingredients:
    • Cilantro Pesto (or any other kind) [recipe below!]
    • Bowtie Pasta (or pasta of your choice)
    • Pine Nuts, toasted
    • Marinated Artichoke Hearts,chopped
    • Chicken Breast, shredded



    Cilantro Pesto:

    • Cilantro
    • Garlic
    • Pine Nuts, toasted
    • Parmigiano Reggiano
    • Lemon Juice
    • Extra Virgin Olive Oil
    • Salt & Oil


    1. In a food processor blend together cilantro, garlic and pine nuts.




    2. Add parmigiano reggiano and blend again.  Slowly add the olive and blend until you get the right consistency.  Add lemon juice and season with salt and pepper.  Blend again until everything is well incorporated.  Set aside to use for the pasta salad.




    3. In a medium bowl combine pasta, chicken and artichoke.




    4. Add pesto and pine nuts and toss together so that it is well mixed.




    5. Place in bowl and serve.  This could easily be turned into a hot pasta dish.  All you need to do is just cook it in a skillet!
