Orange Ginger Chicken - Help!
I was going through my recipes and I came across this one. It's not finished. I've worked on it quite a bit by making it over and over again but I still haven't quite got it. Heck I don't even know the measurements, I just add a pinch here a shake there. So if anyone could help me, that would be nice...
Ginger Chicken
Ingredients:
Chicken Breast
Olive Oil
Garlic, minced
Salt
Pepper
Ginger, crushed or fresh
Orange Juice
True Orange or Oranges (if available)
Vegetables: onions, bell peppers, mushrooms, snap peas, carrots, etc.First make the “marinade.” Mix the olive oil, garlic, salt, pepper, and ginger together in a bowl or Ziploc bag. Then take the chicken and trim off the fat and cut into stripes. I also like to stab the chicken with a fork to get the juices in there. Coat the chicken with the “marinade” and let soak for at least an hour—no longer than one day.
Depending on how much olive oil was used in “marinade,” add a little olive oil to a hot pan. Cook chicken till no longer pink on the outside.
Put chop onions, bell peppers, mushrooms, snap peas, carrots, and minced garlic in a pan and sauté.
Throw chicken and vegetables together and cook with orange juice.
*I want to try to make some kind of orange ginger glaze but I don't know*
Serve over rice.

A little bit of soy sauce in the marinade? Or maybe some sliced green onions? (I think some people call them scallions.) Or stir in some orange segments (peeled, of course) just before serving so there would be some fresh orange flavor. For the orange glaze, I'd use orange juice and a cornstarch slurry (cornstrach and water, be careful, a little cornstarch goes a long way). Good luck
@babybug329@xanga - Hmm, those are all good ideas! I'll have to try it next time I make it. I can't believe I never thought about putting soy sauce in it...

soy sauce definitely. maybe some sweet rice vinegar (mirin) would go good for that sweet factor.

@caffeinated_mama@xanga - They're usually in the "asian/ethnic" section of most grocery stores. Either saying sweet rice vinegar or mirin.

add a little soy sauce. and maybe some hot peppers (if you're into that kind of thing). scallions would be good too. slice them very thin.
also try velveting the chicken, cooking the sauce down, and tossing the chicken in the cooked sauce. cooking the sauce will 1- thicken it and 2- concentrate the flavours. and velveting the chicken will give it a nice crispy outside, giving the dish some contrasting textures.
i would approach making the sauce in this manner.
oil in pan. cook orange zest, peppers, garlic, and ginger. be careful not to scorch garlic as it will become bitter. season with salt and pepper. add rice wine, orange juice, a splash of soy sauce and reduce. you can also use and add some sweet chili sauce. if your sauce is runny, you can make a cornstarch slurry. make sure you bring the sauce to a boil if you do so. add sliced scallions at the end.

What about lime? Would that help?
@Mnemosyne_speaks@xanga - Lime isn't used much in oriental cuisine but it might taste good... Maybe I'll try it.
