hereFor the zucchini fries:
2 medium zucchini, sliced into sticks
1 large egg white
1/3 cup panko
2 tbsp. grated Pecorino Romano cheese
cooking spray
1/4 tsp. garlic powder
1 tsp of cayenne pepper
salt
fresh pepperFor the marinara sauce:
1 tsp. olive oil
2 garlic cloves, smashed
28 oz. cans crushed tomatoes
1 tsp. oregano
2 tbsn. chopped fresh basil
salt and fresh pepper, to taste Preheat the oven to 425 F. In a medium pot, heat the olive oil over medium heat. Add the garlic and saute until golden, being careful not to burn it. Add the crushed tomatoes, salt, pepper, oregano, and basil. Stir and reduce the heat to low. Cover and let simmer about 20 minutes. In a small bowl, beat the egg whites. In a ziplock bag, place the panko, garlic powder, cayenne pepper, salt, pepper and cheese; shake well. Spray a cookie sheet with cooking spray and set aside. Dip the zucchini sticks into the egg white and then place it into the panko and cheese mixture, a few at a time and shake to coat. Place the breaded zucchini in a single layer and spray more cooking spray on top. Bake for 20 - 25 minutes, or until golden brown. Serve with some marinara sauce for dipping.

Your zucchini fries look so healthy and fresh! I never understood the fried ones...you're trying to eat more vegetables, but you batter and fry them, totally defeats the purpose. These don't look like they'll do too much damage. I like zucchini in stir fries and vegetable soup. Or grilled on the barbecue grill. Even roasted.
I prefer cutting the zucchini into large chunks and steaming them.

my favorite thing in the world to eat and cook involves zucchini.
i use two med zucchinis, 3 small yellow squash, and one large tomato.slice the zucchini and squash, and cut the tomato into chunks, throw into a skillet and drown in mojo marinade, then season with creole seasoning...not sure of the bran but it comes in a green can.i call this my vegetable medley!
