What I’m Making This Weekend
The stress of the long week makes me yearn for the weekend. I always brainstorm to come up with something really great that I can cook on my upcoming days off. Sometimes it is a meal, others it is something sweet (usually it’s both =p).
Grilled Chicken Taco Pizza (pictured above)
The warm weather is here and I want to take advantage of my outdoor grill. Plus, I’ve been obsessing over pizza lately: I make it at least twice a week!

How do you think this pizza will taste? I will probably serve it with red beans and rice and/or chips and salsa.
…And for dessert:

Sour Cream Coffee Cake
Ingredients:
1 stick of softened butter
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 cup sour cream
Filling:
½ cup sugar
1 tsp cinnamon
Directions:
- Cream butter, add sugar eggs and vanilla
- Mix dry ingredients together and add to egg mixture alternately with sour cream
- Sprinkle a little of the filling inside the walls of a well-greased bundt pan
- Pour half of the batter in pan, and sprinkle half of filling over it
- Place remaining batter over filling, and then sprinkle with remaining filling mixture
- Bake 375 for 35 minutes
- Top with powdered sugar
Makes 8-10 slices
I have made this cake before and it is a surefire winner. I love it so much, but so does everyone else, so I usually end up making two. The sour cream adds nothing to the flavor, which is a good thing, but it definitely makes it super moist!

by the way... the grilled chicken taco pizza looks delicious!!!
I'm single, and I live alone. I cook all the time, whether it's my day off or not.
That said, my days off are when I usually go into mad scientist mode, and start experimenting.

. I love to cook on my day off, even on workdays! On days off, I might do baking as well.
The pizza sounds absolutely deliscious and looks like it too! It's definitely something I would like to try out making sometime in the near future.
I don't think that rice, or chips and salsa are much of a compliment to this pizza though. I would try for a more light, refreshing kind of taste... like maybe a twist on a cobb salad, or a greek salad. The right salad dressing could compliment both of these and make them stick out beautifully with the pizza. :)
how do you make the pizza thingg ? like what do you use & put on it...looks veryy interesting !
