
I like to think I eat enough vegetables all the time, but honestly that's not true. I'm currently on a health kick because I am getting married in 5 months and I'm trying to drop a few extra pounds in order to be in tip top shape for the big day. I like to have a roasted vegetable every night with dinner and I have also been eating raw carrots for a snack during the day. I generally like vegetables, so it's not like I am suffering. It's rather easy to eat well, I just makes sure I eat what I like.
5. Mushrooms

I LOVE mushrooms! I know there are a ton of people out there who absolutely cannot stand them and I can actually see why. They are a little strange and fungus-y, but for whatever reason I love the taste and texture, raw or cooked.
4. Broccoli
Roasted broccoli is pretty fantastic. I have a hard time eating raw broccoli unless it's slathered in some kind of dip. Drizzle with olive oil and sprinkle some salt and pepper, then pop it in the oven for 20 - 25 minutes at about 375/400 degrees and it's perfect!
3. Corn on the Cob
I actually made some roasted corn on the cob for dinner tonight and I was very surprised with how good it came out. I did the same roasting method as the broccoli, except I also added some Parmesan cheese. It was rather tasty after cooking it for about 30 minutes.
2. Brussel Sprouts
I used to hate brussel sprouts, they can be rather bitter and pungent if they aren't cooked right. I recommend slicing the bottoms off and peeling off the outer leaves, then slice them in half and roast just like the rest of the vegetables. They are also good when sauteed in a pan with some olive oil or butter.
1. Beets
Beets are delicious eaten hot or cold. These are roasted each separately wrapped in tin foil. When they are done, the skin peels right off and they are ready to be devoured. They are my favorite eaten on their own or in a salad with goat cheese and walnuts.

Beets and mushrooms are things I'll eat if they're already mixed into my food, but I don't particularly like them. I can't stand Brussels sprouts, although I do find it fascinating how they grow. I enjoy corn and broccoli a lot.
My top five would be corn, sweet potatoes, tomatoes, carrots, and broccoli. I'm not very fond of mushrooms or brussel sprouts
I've never tried beets or brussel sprouts, and I can't stand mushrooms.
If I had to choose, I guess my top 5 would be broccoli, corn, potatoes, peppers, and eggplant. C:

First of all, MUSHROOMS ARE NOT VEGGIES. THEY ARE FUNGI.
Bok choy, dandelion leaves, daikon, broccoli, V8 (just kidding :p), onions, and peas. I would say cukes and tomatoes but those are fruits. Mushrooms are fungi but I love them!

favs are: eggplant, zuchhini (and any other kind of squash), peas, green beans, carrots, cucmber, mushrooms, chard, arugula, aspargus, spinach, kelp, soy, avocado, broccoli, cauliflower, tomatoes, brussels sprouts, leek, peppers (red, yellow, green), dandelion leeves, red radishes, turnips, olives...

Mushroom is a fungi and corn is a grain. I know the definition of a "vegetable" is really debatable, but I hate for those two things to count as vegetables.

I love all of these but I've never tried brussel sprouts. I also love green beans, peas, bok choy, kale, collard greens, carrots, potatoes, asparagus, squash, peppers, spinach (raw), radishes, onion/shallots (cooked), tomato (but it's a fruit), rutabega, most lettuces, etc. I'm not vegetarian but I believe in the power of veggies! haha
