Help Needed: Easter Suggestions!

My mother in law is making prime rib, ham, and all the other fixings. She asked me to bring a vegetable tray and some dessert. Like usual I have a million ideas running through my head and I can’t narrow them down. His mom said “maybe something with chocolate or cheesecake” but I’m not very into chocolate.Here are some options:
- Chocolate Trifle (everyone loves this but me, which is fine because I don’t need to eat it anyway) it’s easy to make and very pretty.
- Fruit Tray with fruit dip -simple and something to snack on but it can get expensive.
- Jello Cake - one of my favorites, it’s a light yummy dessert that you don’t normally have everywhere.
- Apple cake- can’t find a good picture but basically it’s like a combination of apple pie and apple cobbler. Delicious!
- Mini Cheesecakes- I’ve never made these but I love cheesecake.
I would like to take 2 desserts. Jamie also suggested making this pineapple cake thing with pudding on top that she makes, but I don’t even know if she’s going and I hate to count on her. Maybe I’ll tell her to go ahead but still make my two dessrts anyway.
Opinions? Ideas? What do you guys think I should make?

From the choices you've listed, I'd go with the Jell-O poke cake because it's easily adaptable, light and fruity for Easter. I also like the cheesecake idea, but I wouldn't trouble myself with making minis. I like making cheesecake with premade crusts using the cheesecake recipe on the Philadelphia cream cheese package. I'd top it with sliced strawberries. Or, you can swirl in some Nutella, strawberry jam or raspberry preserves for other flavors. Or...how about panna cotta? If you can make Jell-O, you can most definitely make this. For a party, I'd either make it in a decorative mold or pour into small clear plastic cups. Decorate with fresh berries.
