
The other morning I had came in from my wonderful morning jog (I don’t do this every day just to let you know

), and I was totally starving. My favorite meal of the day is breakfast, so I instantly reached for the eggs in my fridge. I remembered that I had a bunch of produce still to be eaten so I decided on making a super veggie scramble. I love to buy fresh vegetables when I’m at the supermarket, but because it’s usually just me eating, my vegetables more or less end up going to waste.
I was very excited that today would not be one of those days, and I started cutting up some green onions that I hadn’t even touched (I bought them over a week ago), the rest of the red pepper I had, some red onions, left over asparagus from Monday night’s dinner, and when it was all done I added the left over diced red potatoes I had as well and some graded cheese. I have one word to describe my breakfast--YUMMY!
I love impromptu meals like this one, because A-it didn’t take long to cook, and B-It helped me empty the fridge too!
What dishes do you make with your produce when they are on the verge of going bad?

I'm on an avocado kick right now but they go bad so quickly once you cut them up so I end up adding them to everything. My favorite combo right now is tuna fish and avocado slices.

I love fresh vegetables, too! Definitely preferred, although I do sometimes buy frozen if I know I am going to be busy or the fresh ones are crazy expensive. Sometimes I do go overboard and end up with some veggies about to be chucked. In that situation, I might do one of the following:
1. I make vegetable scrambles, like you would. Either served with toast or rolled up in a tortilla with cheese for breakfast burritos. I actually prefer the vegetable one over one made with bacon, ham or sausage. It's filling but not as heavy.
2. Vegetable soup, either chunky broth based, or pureed.
3. Stir fry, with, or without meat, served over rice.
4. Add to packaged mac and cheese. I chop up the vegetables, usually carrots or broccoli and add them to the pasta a couple minutes just before its done, then add the cheese sauce.
That sounds really good. I have the same issue, buying stuff, but not being able to eat it before it goes bad.
I just roast them all in the oven! :) Cooking veggies like that always brings out their amazing flavor!
