  • Pita Pizza with Hummus and Mint

    Minoo made a Pita Pizza with Hummus and Mint as a snack item for the South Arm Community Kitchen. This makes a healthy lunch box item or after school snack.

    Minoo used whole wheat pita bread as the base for the pizza. Instead of using tomato sauce for flavouring, he used hummus which is high in protein. Minoo used a store-bought prepared hummus for this recipe for simplicity. You can make your own hummus with this Creamy Hummus recipe.

    Ingredients

    • 1 teaspoon olive oil
    • 1 small sweet onion, sliced
    • 1 cup plain hummus
    • 4 greek-syle whole wheat pitas
    • 2 tomatoes, thinly sliced
    • 1/4 teaspoon hot-red chili flakes
    • 1 yellow or red pepper, sliced
    • 2 cups broccoli florets, blanched
    • 1 cup crumbled feta
    • 1/4 cup shredded fresh mint
    • cumin and black pepper to taste

    Serves 4 to 8

    Instructions

    Position oven racks in centre and lower third of oven. Preheat oven to 425F.

    If desired, flavor the hummus with cumin and ground black pepper.

     Minoo flavoured the plain hummus with cumin and ground black pepper.

    Heat a frying pan over medium. Add oil and fry the onion until slightly soften, about 5 minutes.

    Spread hummus on pitas, right to the edges.

    Top with tomato slices, pepper slices, broccoli and cooked onion. Sprinkle with feta and chili flakes. Bake, switching sheets halfway through, until edges of crusts are deep golden, 12 to 15 minutes. Sprinkle with mint. Cut and serve.
