St. Patrick's Day - Corned Beef and Alcohol Galore!
Personally, I've never been too big on St. Patrick's Day. As a kid it was always fun wearing green, but then came a point when I wasn't 8 years old anymore and that kind of stuff wasn't as enjoyable.
But this year is a little different than past years. For the first time since I was 12 years old, I will be able to enjoy corned beef! Why? I was vegetarian from 8th grade up through last summer. I can't lie...I'm pretty excited to enjoy this delectable meat! Now I just need to look for the best corned beef and cabbage recipes...
As a vegetarian, I often ate imitation meat and was fully satisfied with it (although I started to eat meat again, tofu and soy products are still a large part of what I like to eat). Despite all of the good imitation meats out there, I never found a corned beef substitute that was as satisfying as the real deal. Perhaps some of you vegetarian/vegan readers know of a good one?
Another reason to be excited? It's the first year that I am 21 for St. Paddy's! As a holiday that is pretty heavily revolved around drinking, it's nice to know I can finally take part in the festivities. Green beer, here I come!
I am using this year's St. Patrick's Day as an excuse to go a little crazy and attempt to make a meal I have never made before. Cooking something new is always exciting!
Perhaps I'll even make little shamrock shaped shortbread cookies for dessert..with green food coloring of course.

If you have a slow cooker, that's a great way to cook corned beef. I've done it that way many times.
Hey Ali, we've flip-flopped! I gave up meat for Lent, so now I can't enjoy corned beef for St. Paddy's Day :( I love reubens minus the sauerkraut. I might swing by my local deli to try a veggie reuben instead!
I also love Irish soda bread. My aunt always made it growing up for the holiday, and I'm going to attempt it tomorrow.

I never really did anything special for St. Patrick's Day, it's not really one I celebrate. But this year at special request I am making the "Irish Car Bomb" cupcakes, the chocolate stout cupcakes with whiskey/Irish cream frosting.
@ginakuzmick@xanga - yeah my 8th grade history teacher brought Irish soda bread cos his wife was Irish....sooo good.

dont people feel sick after eating meat? i know quite a few people that are vegetarians/vegans and when they had their first taste of meet again, they felt sick to the stomach D;
