Top 5 Absolutely Awesome Use-Em-All-The-Time Vegetables
What's the best part about vegetables? Everybody eats them! Whether you're a vegetarian/vegan, gluten-free, watching carbs, on a raw diet, or none of the above, it's one of the food groups everyone can enjoy. When it comes to myself and vegetables, there's a good handful that always make it on my plate.
1) Spinach
Yum Yum Yum! This leafy veg pops up in my diet in so many different ways - whether it's sauteed on the side of a good steak, in some stromboli, throughout my risotto, or on top of my eggs with some hollandaise sauce.
2) MushroomsI know, mushrooms aren't for everyone (case and point, my dad ate a poisonous mushroom outside when he was 3 and had to get his stomach pumped, hasn't touched even an edible mushroom since). But for my fellow mushroom lovers..you get it. In my opinion, the best form of mushroom is that of a portobello mushroom burger (especially the ones my grandfather makes).
3) Broccoli
As far as I can remember, broccoli was my first favorite vegetable. Ever. Even as a little kid I LOVED broccoli, raw or cooked.
4) Shallots
Some of you may remember shallots making an appearance on my top 5 ingredient list. Well, here they are again! I recommend them sauteed with spinach, mushrooms, and garlic or in thin slices added to a salad with goat cheese and olives.
5) Lettuce
At first I debated putting lettuce on this list. I mean, it's lettuce. But then I thought about it..lettuce is the basis for every salad I eat. It's on my sandwiches, in my wraps, and on my burgers. I eat lettuce all the time!! It would have been silly to not include it here.
Trust me - this list could have been a lot longer, but then I probably would have just ended up listing every vegetable in existence. (In case you are curious, 6 and 7 would totally be asparagus and corn.)

Mushrooms are a fungi, not a vegetable. And I disagree. I can't stand mushrooms. I've never had shallots either, it's NOT common. Add carrots and celery and take out mushrooms and shallots and you might be correct.
I have to agree that spinach is awesome! I actually prefer it to lettuce in salads and on sandwiches. I'd also have to add green peppers since they're so diverse. You can use them in ethnic dishes or in soups and salads. I also loooove green beans!
i've recently discovered that orange and yellow bell peppers are actually a bit sweet, and go well with salads. i agree with your list, except the shallots part.
@haloed@xanga - There is no scientific definition of a vegetable, it's based off culinary tradition. So yes, mushrooms are vegetables.

Now berries, that's one that's one with a scientific definition that many people mess up. Raspberries and Strawberries aren't true berries for example but bananas, watermelon, pumpkin and grapes are.

I like most vegetables (there are a few exceptions), but I guess my five favorites are mushrooms, cabbage, broccoli, potatoes, and tomatoes.

i'm with you on broccoli, it's my absolute favourite, as well as cauliflower, chinese cauliflower (gai lan) eggplant, cabbage, tomatoes, carrots. it'd depend on the vegetable, but normally, i like them cooked, except for carrots and cucumbers, i love them raw.
Garlic, Peppers, Onions, Ginger, Cabbage, Lettuce, Chinese Cabbage, Swamp Cabbage, Chayote and Carrots

shallots are absolutely delicious
but too pricey for my budget, so I mostly use onions =\
and mmmm!! my lord!! replace lettuce with baby gem lettuce and thats a winner!
baby gem lettuce tastes wonderful
if you think simple lettuce makes great salads
replace it with baby gem lettuce and that salad will taste so much better
and I love crunchy vegetables
so red bell peppers are my favorite peppers, esp roasted!
and freshly cut cucumbers are ssooooo incredibly refreshing
Next time you eat chicken salad! Replace lettuce with slices of, cucumbers and that crunchy freshness will be so amazing!

Red union
Broccoli
Leak
Any type of lettuce
Paprika
Gotta agree on the spinach and mushrooms. I always throw a handful of spinach in my smoothies. Might sound a little weird, but it's sooo good. And I like to use make mini pizzas using portabella mushroom caps in place of the pizza crust.
I'd also add green peppers. I eat 'em like apples.

My parents keep telling me how much I loved broccoli as a kid but I don't believe them.
The only way i'll ever eat muchrooms are if they come from a can and are cooked up with some teriyaki =p .

I'm in love with broccoli and lettuce. And I'm sorry, but mushrooms? They're not vegetables; they're fungi.
I eat everything on your list. Most of my family, excluding my sister, enjoy eating veggies. Mushrooms and celery are only eaten if they are cooked a certain way. My favorite veggie is Chinese Spinach. My mom cooks it a certain way so it comes out delicious. Good list.
People who eat healthy foods are usually in better health according to most studies. My eating Plan is 75% Vegetables & Fruits, 5% whole gains and 20% Chicken and Fis. My favorite Veggies are lettuce, broccolie, green peppers, spinach, and carrots.
I think tomatoes should be on the list!
