Vege Chili: Comfort Food for the Relentless Cold
Who doesn't love sitting down to a bowl of chili on a cold winter day? Chili
Ingredients:- 1 medium onion, chopped
- 2 medium carrots, chopped
- 1 tbsp olive oil
- 4 cups canned kidney beans
- 2 cups of assorted canned beans
- 1 28oz can of diced tomatoes
- 6oz tomato paste
- 8 mushrooms chopped
- 1/2 bell pepper (any colour)
- 1 12oz can of corn
- 3/4 cup of rice
- 2+ tbsp chili powder
- 1 tbsp pepper
- 3 cups water/vegetable stock
- 4 tbsp nutritional yeast (optional)
1. In a large pot saute onions and carrots in oil on medium-high heat until onions become translucent.
2. Add remaining ingredients and stir together.

3. Simmer on medium-low heat for 40-60min, stirring occasionally.

Serve and enjoy!
Note: You can add other veggies into the chili as you see fit, say zucchini?

You forgot the meat.
Sounds really yummy!! I like bean soup but can't handle the chili spices. Or tomato either. Oh well, the rest of my family will love it.
