  • Baked Potatoes filled with Egg, Cheese and Ham

    I worked yesterday and had a late lunch so I wasn't really interested in cooking a big dinner.   So, I decided to make Moe happy by cooking two of his favorites -  Eggs and Baked Potatoes. 

    I baked small russet potatoes, hollowed them out, filled with a little butter and cheese, topped with an egg, fried ham  and a little cream and baked at 400° until the eggs were set.  Sprinkled with chopped scallions and served with toast.


    According to Moe these were fantastic.
