  • Quick & Simple Chinese Cooking: Stir-Fried Fish with Mushrooms and Ginger

    With the increasingly cold weather these days, I've been preparing more ginger dishes lately to keep warm and today I'll be sharing with you a simple Chinese stir-fried fish with mushrooms and ginger recipe. I hope this dish will help fight off some awful bouts of cold in your part of the world!

    Ingredients:

    • 3 cloves of minced garlic
    • Thin strips of sliced fresh ginger
    • 3 - 6 Fresh shiitake mushrooms
    • 1 tablespoon of hoisin sauce (if you can't find it in your local supermarket, try these substitutes: http://www.buzzle.com/articles/hoisin-sauce-substitute.html)
    • 1/4 cup (60 ml) chicken stock or 1/8 stock cube dissolved in 1/4 cup (60 ml) hot water
    • 500g of thinly sliced white fillet
    • 2 teaspoons fish sauce
    • 1 teaspoon sugar
    • 1/2 teaspoon freshly ground black pepper
    • Thinly cut chilies
    • 1 spring onion, cut into lengths, to garnish
    • Coriander leaves/Cilantro to garnish

    Stir-fry the garlic, ginger and mushrooms with oil for 2-3 minutes.

    Add hoisin sauce and stir-fry for a few seconds.

    Add chicken stock and bring mixture to a boil.

    Stir in fish pieces and simmer uncovered.

    Add 2 tsp of fish sauce, 1 tsp of sugar and 1/2 tsp of black pepper. Mix well.

    Add chili (if you like spice), mix well and remove dish from heat.

    Serve with piping hot rice, garnishing with cilantro and spring onion.

    (I threw in some stir-fried vegetables with oyster sauce as I couldn't live without my greens!)
