  • The Holy Trinity of Rice, Beans, and Meat: A Tribute to my Favorite Foods

Whether you were raised in an hispanic family, or you ever set foot in any Latin restaurant, I will bet good money that you have stumbled across rice, beans, and some kind of meat as part of your meal.

These are the veritable bread and butter of any Spanish meal, and I pride myself on having these at least 2-3 times a week. Growing up, my mom used to call the three together "una bandera": a flag. This was considered the most patriotic dish for my Dominican family.

I've taken the liberty of listing some of my favorites in each of the categories.
The meats: ropa vieja (shredded beef cooked in a tomato and beef stock sauce), pepper steak, chicken stew, beef stew, and pork chops.

The rice: these are a little more basic, I usually go for either yellow or white. Nothing too overt here. Though, I do enjoy when the beans or meat is cooked directly with the rice (better known as moro. or locrio, respectively).

The beans: whether cooked together with the rice, or done as a side, I love beans, peas, and everything in between. My favorites are black beans. I liked them cooked thick like a soup, with lots of garlic and cilantro inside. Probably the only thing that I could eat on a daily basis.

What are some of the staples in your meals?
