  • Recipe: Leftover Stuffing Omelette

    One of my favorite parts of the Thanksgiving meal is stuffing.  I know it's not very good for me, but I figure it's probably ok that I only eat it a few times a year. 

    Since I have a pretty big family, we make a lot of food, but there always manages to be tons of leftovers.  Everyone takes some home with them, and over the years we've come up with lots of innovative ways to re-use them.  This year, I came across a very interesting recipe for leftover stuffing: Stuffing Omelettes.

    I got this recipe from Sam the Cooking Guy, host of local San Diego cooking show by the same name and "Just Cook This!" on Discovery Health.  I have made several of his recipes--all of which use easy-to-find ingredients and are simple to make--and they always turn out delicious.  I'll admit, though, when I saw this recipe, I thought it sounded a little weird.  However, since I trust Sam's recipes, I decided to give it a try.

    As strange as it sounds, this recipe is awesome!  It's a great way to use up the leftover stuffing in your fridge, and it's delicious, too.  However, it is very filling, so the next time I make it I'll only use 2 eggs.

    Stuffing Omelette

    (Serves 1)

    Ingredients

    • 1/2 tablespoons butter
    • 3 eggs (or less, depending on how hungry you are!)
    • 1-2 slices American cheese (or whatever kind you like)
    • Approximately 1/3 cup (or less, if you are using less eggs) leftover stuffing, room temperature
    Directions
    1. Beat the eggs well in a bowl
    2. Melt butter in a non-stick pan over medium heat, and add eggs.
    3. Allow the eggs to set.  Add stuffing to one half and cover with cheese, flip other side over to make a half-moon shape, and cook to desired doneness.
    *Alternative: cook as scrambled eggs, adding the stuffing and grated cheese once eggs start to set, then scramble and cook until desired doneness.
