Quick Japanese Cooking: Teriyaki Chicken Don

In anticipation of my approaching poor and overworked MBA student days, I've recently began scouting and trying out more fast/simple cooking recipes.
Whether you are a busy working professional or multi-tasking student, if you are/will be time-&-cash-strapped like me, stay tuned to this space for more quick dishes in the coming days! Today, I shall start the ball rolling with a personal favorite, the Japanese Teriyaki Chicken Don (i.e. Teriyaki Chicken served on rice).
It's certainly one of those dishes where you can prepare in a jiffy and savor Japanese goodness without breaking your wallet. Shall we begin?Ingredients:
- 200g chicken thigh (sliced)
- 1 pack of shredded seaweed
- 1 tablespoon of sugar
- 1 tablespoon of soy sauce
- 2 tablespoon of rice wine
- Shichimi (Seven flavor chili pepper) - Optional
Place chicken in a fry pan, skin facing down. Cook till chicken browns.

Mix 1 tbsp sugar, 1 tbsp soy sauce & 1 tbsp rice wine together.

Turn chicken over and add in the above mixture. Heat till the entire chicken is thoroughly cooked.

Place cooked rice in a bowl, add the chicken on top and complete the topping with shredded nori.
Sprinkle shichimi if you like a touch of spice to your dish like I do!

I certainly look forward to recreating this dish in France next year whenever I feel "homesick" about my life here in Tokyo. In the meantime, I hope this dish will add yummy Japanese flavors to your day wherever in the world you may be.

Mmm <3 I love teriyaki chicken with brown rice and steamed veggies... accompanied by copious amounts of hot sauce.
