Clearly, the
Cabbage Tomato Soup is one
soup I cook quite often. Why not...come fall or the colder winter months; most people keep their grills and warm up at home with a soothing comfort soup.
A little spice and garnish. Pinch of curry powder and turmeric powder, if you wish, while you cook the soup; or pinch of freshly ground black pepper.
This time, I did it without
dried herbs of oregano and basil and used coarsely chopped fresh cilantro leaves instead.
I know a lot of you can have this as a meal on its own, just like myself. However, to get a little protein (balanced nutrition) out of the cabbage and tomatoes, I usually add a hard-boil egg. How I enjoy simplicity at its best:

What do you think of the embroidered table linen? You know how I hated "lacey" stuff when I was much much younger. It feels SO OLD-FASHIONED, so off-beat. But now that I am not so young, I am beginning to see some beauty in such table linen. They can actually be quaint and pretty gorgeous?

Cabbage and Tomato Soup with EggIngredients: 1/2 tsp finely minced garlic; 1/4 of big onion, finely diced; 1/2 head of cabbage, sliced to fine shred; 1-2 tomatoes; pinch of turmeric and curry powder; 2-3 cups water, adjust amount accordingly; salt and freshly ground pepper to taste; cilantro to garnish; hard-boiled eggs
Directions: Heat some olive oil in a pot, add onion and garlic and fry till fragrant.
Add tomatoes and cabbage, pinch of turmeric and curry powder, saute till veggies turn slightly tender and reduce in volume (esp. the cabbage). Add some water and simmer at low heat till cabbage are cooked.
Season to taste with salt and freshly ground pepper. Before serving, add in hard-boiled eggs and garnish with cilantro.

I'm not really a big fan of cabbage unless we're talking about chopped-up stir-fried-with-a-bit-of-soy-sauce cabbage. Or cabbage with corned beef. But that does look pretty good.
My favorite soup to make is roasted corn and red pepper soup. I haven't yet been able to find a fantastic recipe, (I was introduced to it on campus) but when I do, my life will be complete.I envision this with the good tried-and-true mirepoix; onion, celery and carrot base. It looks good! I think we're going to try it!
Cilantro and cabbage? I had in mind a more German or Irish flair to this soup. Not a fan.
@amyunicorn@xanga - I agree! I didn't know it had a name, I make my veggie soup like that, with the tomatoes, cabbage and chicken broth.
@babybug329@xanga - They also call it the "Holy Trinity" for soup base. My hubby doesn't want the egg, but I'll probably do it for mine :)
